Ingredients

  • Frozen crispy French fries or homemade fries (about 4 cups / 600g)
  • Vegetable oil or olive oil for baking or frying
  • Salt and pepper to taste
  • Ground beef or turkey (1 lb / 450g)
  • Onion, finely chopped (1 medium)
  • Garlic cloves, minced (2 large)
  • Tomato sauce (1 cup / 240ml)
  • Kidney beans or black beans, rinsed and drained (1 cup / 170g)
  • Chili powder (2 tbsp)
  • Cumin (1 tsp)
  • Smoked paprika (1 tsp)
  • Salt and black pepper to taste
  • Optional: a pinch of cayenne for heat
  • Sharp cheddar cheese, shredded (1½ cups / 150g)
  • Pepper jack cheese, shredded (1 cup / 100g)
  • Jalapeños, sliced (fresh or pickled)
  • Green onions, thinly sliced
  • Sour cream or Greek yogurt for dolloping
  • Fresh cilantro leaves (optional)
  • Pickled jalapeños or banana peppers for tang
  • Crumbled cooked bacon (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Spread the frozen fries evenly on a baking sheet lined with parchment paper. Drizzle with a little olive oil and season with salt and pepper. Bake for 20-25 minutes until golden and crispy, flipping halfway through. If using an air fryer, cook at 400°F (200°C) for about 15 minutes. Tip: Don’t overcrowd the fries or they’ll steam instead of crisp.
  2. While the fries bake, heat a large skillet over medium heat. Add the ground beef or turkey, breaking it apart with a wooden spoon. Cook until browned, about 6-8 minutes. Drain excess fat if needed.
  3. Add the chopped onion and garlic to the skillet and sauté for 3-4 minutes until softened and fragrant.
  4. Stir in the tomato sauce, beans, chili powder, cumin, smoked paprika, salt, pepper, and cayenne (if using). Reduce heat and let simmer gently for 15-20 minutes, stirring occasionally. The chili should thicken and develop a rich aroma. Note: If it gets too thick, add a splash of water or broth.
  5. While chili simmers, shred the sharp cheddar and pepper jack cheeses. Slice jalapeños and green onions, crumble bacon if using, and set out sour cream and cilantro.
  6. Arrange the crispy fries on a large platter or individual plates. Spoon generous amounts of chili over the fries, then sprinkle with shredded cheese so it melts over the warm chili. Add jalapeños, green onions, bacon, and dollops of sour cream. Garnish with fresh cilantro leaves for a pop of color and freshness.
  7. Serve immediately. This is best enjoyed fresh and hot. Let your guests build their own loaded chili cheese fries with as many toppings as they like. Pro tip: Have extra napkins on hand—you’re going to need them!

Notes

Bake fries extra crispy before topping to avoid sogginess. Let chili simmer low and slow for deeper flavor. Freshly shred cheese for best melting. Keep toppings separate for easy customization. Chili can be made ahead and reheated. Use gluten-free fries and check seasoning for gluten to keep recipe gluten-free. Vegetarian option by swapping meat for plant-based crumbles or extra beans.
