Easy Mummy Sugar Cookie Bars – Perfect Spooky Halloween Treat

Soft, buttery sugar cookie bars topped with a simple powdered sugar icing piped into mummy stripes and finished with candy eyes. An easy, no-fuss Halloween treat that comes together in about 35 minutes.

  • 1 cup (2 sticks) unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour (spooned and leveled)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup powdered sugar, sifted
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • Candy eyes (for decoration)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on two opposite sides.
  2. In a large bowl, beat softened butter and granulated sugar together on medium speed until light and fluffy, about 2-3 minutes.
  3. Add egg and vanilla extract; beat on low speed until just combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing on low speed until just combined. Dough will be thick and slightly sticky.
  6. Press dough evenly into prepared pan using a spatula or lightly floured hands.
  7. Bake for 18-22 minutes, until edges are lightly golden and center is set. Cool completely in the pan on a cooling rack (about 45 minutes to 1 hour).
  8. Lift cookie slab out using parchment handles. Cut into 12 even rectangles.
  9. For icing: whisk together sifted powdered sugar, 2 tablespoons milk, and 1/2 teaspoon vanilla extract until smooth. Add more milk if needed for piping consistency.
  10. Transfer icing to a piping bag or zip-top bag with a tiny corner snipped off. Pipe horizontal lines across each bar to create mummy wrapping, leaving a gap for eyes.
  11. Press two candy eyes into the gap on each bar while icing is still wet. Let icing set for 15-20 minutes before serving.

Notes

Make sure butter is truly softened, not melted. Cool bars completely before icing to prevent melting. Pipe mummy stripes messily for best effect. Store in an airtight container at room temperature for up to 4 days.
