  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour (8g)
  • 1 tablespoon heavy cream (15ml)
  • 1/4 cup old-fashioned rolled oats (25g)
  • 1/4 cup all-purpose flour (32g)
  • 1/4 cup brown sugar (50g), packed
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • 3 tablespoons cold unsalted butter (42g), cut into small cubes
  • Vanilla ice cream or whipped cream (for serving, optional)
  • Extra caramel sauce for drizzling (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the center of the oven.
  2. Peel and slice your apples into 1/4-inch thick pieces.
  3. In a medium mixing bowl, combine the sliced apples, 2 tablespoons brown sugar, 1 tablespoon granulated sugar, 1/2 teaspoon cinnamon, 1/8 teaspoon nutmeg, 1 teaspoon vanilla extract, 1 tablespoon flour, and 1 tablespoon heavy cream. Toss until apples are evenly coated. Let sit for 5 minutes.
  4. In a small bowl, combine the rolled oats, 1/4 cup flour, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, and a pinch of salt. Stir with a fork. Add cold cubed butter and work into the dry ingredients until mixture resembles coarse sand with some pea-sized butter pieces.
  5. Place a 6-inch cast iron skillet over medium heat on the stovetop. Add 2 tablespoons of butter and let it melt completely, swirling to coat the bottom. Remove from heat.
  6. Pour the apple filling into the hot skillet with the melted butter. Spread into an even layer. Sprinkle the crumble topping evenly over the apples.
  7. Bake for 25-30 minutes, or until the topping is golden brown and the filling is bubbling around the edges. If topping browns too quickly, tent loosely with aluminum foil for the last 5-10 minutes.
  8. Remove from oven and let cool for 10-15 minutes to allow the caramel to thicken.
  9. Serve warm, topped with vanilla ice cream or whipped cream and extra caramel sauce if desired.

Notes

For best results, use a mix of tart and sweet apples like Granny Smith and Honeycrisp. Keep butter cold for the crumble topping. Let the crisp rest before serving to allow the caramel to thicken. Can be assembled up to 24 hours in advance and refrigerated; add 5-10 minutes to baking time.
