These soft, buttery pumpkin spice sugar cookies are a happy kitchen accident turned Halloween tradition. They are quick, easy, and perfect for decorating with kids.

  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 ½ cups (312g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 teaspoons pumpkin spice blend
  • For the Homemade Pumpkin Spice Blend: 1 tablespoon ground cinnamon, 1 teaspoon ground nutmeg, 1 teaspoon ground ginger, ½ teaspoon ground cloves, ¼ teaspoon allspice (optional)
  • For the Simple Glaze (Optional): 1 cup (120g) powdered sugar, 2 tablespoons milk, ½ teaspoon vanilla extract, orange food coloring (optional), Halloween sprinkles or sanding sugar

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a large mixing bowl, beat softened butter and granulated sugar together until light and fluffy, about 2-3 minutes with a hand mixer on medium speed.
  3. Add egg and vanilla extract; beat on low speed until just combined.
  4. In a separate medium bowl, whisk together flour, baking powder, salt, and pumpkin spice blend.
  5. Gradually add dry ingredients to wet mixture, mixing on low speed until just combined. Do not overmix.
  6. Lightly flour your work surface and rolling pin. Roll dough to about ¼-inch thickness.
  7. Dip cookie cutters in flour and cut shapes. Place cut cookies about 1 inch apart on prepared baking sheets. Gather scraps, re-roll, and cut more cookies.
  8. Bake for 8-10 minutes, until edges are just barely golden. Centers will look slightly underdone.
  9. Let cookies cool on baking sheet for 2 minutes, then transfer to a wire cooling rack to cool completely.
  10. For glaze: whisk together powdered sugar, milk, and vanilla extract. Add orange food coloring if desired. Drizzle over cooled cookies and add sprinkles immediately. Let set for 30 minutes.

Notes

Do not skip parchment paper; it helps cookies hold their shape. If kitchen is warm, chill dough for 15 minutes before rolling. Use a light hand with flour when rolling. Bake one sheet at a time for even baking. Cookies taste even better the next day.
