Crispy-edged roasted delicata squash rings coated in a sweet and savory maple tahini glaze. This quick and easy side dish is made with simple ingredients and is naturally vegan, gluten-free, and dairy-free.

  • 1/4 cup tahini
  • 3 tablespoons pure maple syrup
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • 1 small garlic clove, minced
  • 1/2 teaspoon salt, plus more for sprinkling
  • 1/4 teaspoon freshly ground black pepper
  • Optional garnish: fresh parsley or cilantro, toasted sesame seeds, red pepper flakes, extra maple syrup

Instructions

  1. Preheat your oven to 425°F (220°C). Position a rack in the middle of the oven.
  2. Prepare the delicata squash: Scrub the squash well, trim off the ends, and slice crosswise into 1/2-inch thick rings. Scoop out the seeds and stringy pulp from the center of each ring.
  3. Make the maple tahini glaze: In a small bowl, whisk together the tahini, maple syrup, olive oil, lemon juice, minced garlic, salt, and pepper until smooth. If too thick, add warm water 1 teaspoon at a time until it reaches a pourable consistency.
  4. Toss the squash rings: Place the rings in a large bowl. Pour about two-thirds of the glaze over them and gently toss until evenly coated.
  5. Arrange on a baking sheet: Lay the glazed rings in a single layer on a parchment-lined baking sheet, ensuring they are not overlapping.
  6. Roast for 15 minutes. Remove from the oven and flip each ring using tongs or a spatula.
  7. Brush the flipped rings with the reserved glaze.
  8. Roast for another 10-12 minutes, until the edges are dark brown and crispy and the centers are tender.
  9. Remove from the oven and let rest on the pan for 2-3 minutes. Transfer to a platter, sprinkle with flaky salt and optional garnishes, and serve warm.

Notes

Don’t skip flipping the rings for even caramelization. Slice squash exactly 1/2-inch thick for best texture. Avoid crowding the pan to prevent sogginess. If tahini is cold, let it come to room temperature before making the glaze. Leftovers keep in the fridge for up to 4 days; reheat in a 400°F oven for 5-7 minutes to restore crispiness.
