A warm, hearty, and simple one-pot vegetarian black bean chili that delivers comfort and bold flavors with minimal fuss and cleanup.

  • 3 cups cooked black beans or two 15-ounce cans, drained and rinsed
  • 1 medium yellow onion, diced
  • 2 medium bell peppers (one red, one green), diced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, preferably fire-roasted
  • 2 cups low sodium vegetable broth
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons smoked paprika
  • 1 ½ teaspoons ground cumin
  • 2 teaspoons chili powder (mild or medium heat)
  • 1 teaspoon unsweetened cocoa powder
  • Salt and pepper to taste
  • A handful fresh cilantro, chopped (optional, for garnish)
  • 1 lime, cut into wedges (optional, for serving)

Instructions

  1. Heat the olive oil in a large heavy-bottomed pot over medium heat for about 2 minutes until shimmering but not smoking.
  2. Add diced onions and bell peppers and sauté for 5-7 minutes, stirring occasionally, until softened and onions become translucent.
  3. Stir in minced garlic and cook for 30 seconds to 1 minute until fragrant, being careful not to burn it.
  4. Add smoked paprika, ground cumin, chili powder, and cocoa powder. Stir well for about a minute to toast the spices slightly.
  5. Pour in the diced tomatoes with their juices and the vegetable broth. Stir everything together and bring to a gentle simmer.
  6. Add the rinsed black beans and stir to combine. Reduce heat to low, cover the pot, and let simmer for 25-30 minutes, stirring every 10 minutes to prevent sticking.
  7. Taste and adjust salt and pepper towards the end. If too thick, add a splash more broth or water; if too thin, remove the lid in the last 5 minutes to thicken.
  8. Optional: Just before serving, stir in chopped fresh cilantro and serve with lime wedges.

Notes

For chunkier texture, reserve half the beans and mash them before adding. Toasting spices is crucial for flavor. Adjust salt gradually due to canned beans and broth. Slow simmering melds flavors best. Can be adapted for slow cooker by sautéing veggies first then cooking on low 4-6 hours.
