  • 1 ½ teaspoons ground cinnamon

  • 1 tablespoon (8 grams) cornstarch
  • 1 cup (90 grams) old-fashioned rolled oats (not quick oats)
  • ½ cup (60 grams) chopped pecans (raw, unsalted)
  • ½ cup (60 grams) whole wheat flour (or all-purpose flour)
  • ⅓ cup (65 grams) coconut sugar (or light brown sugar, packed)
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 6 tablespoons (85 grams) cold unsalted butter, cut into small cubes (or vegan butter/coconut oil for dairy-free)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch or 9×9-inch baking dish with butter or non-stick spray.
  2. Make the apple filling: In a large bowl, toss the sliced apples with maple syrup, lemon juice, cinnamon, nutmeg, and cornstarch until well coated. Let sit while preparing the topping.
  3. Make the oat pecan crumble: In a medium bowl, whisk together oats, chopped pecans, flour, coconut sugar, cinnamon, and salt. Add cold butter cubes and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse sand with some pea-sized butter chunks.
  4. Assemble the crisp: Pour the apple mixture into the prepared baking dish and spread evenly. Sprinkle the crumble topping evenly over the apples without pressing down.
  5. Bake: Place the dish on a baking sheet and bake for 40-45 minutes, until the topping is golden brown and the apple filling is bubbling around the edges. If the topping browns too quickly, tent loosely with foil for the last 10 minutes.
  6. Cool slightly: Let the crisp sit on a wire rack for at least 15 minutes before serving to allow the filling to set.
