  • 1 ½ cups (180 g) all-purpose flour
  • ½ cup (60 g) whole wheat pastry flour
  • ⅔ cup (130 g) granulated sugar
  • ⅓ cup (70 g) light brown sugar, packed
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 large egg, room temperature
  • 6 tablespoons (85 g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • ¼ cup (60 g) plain Greek yogurt
  • ¼ cup (60 ml) apple cider (for glaze)
  • 1 cup (120 g) powdered sugar, sifted
  • 1 tablespoon (14 g) unsalted butter, melted
  • Pinch of salt

Instructions

  1. Reduce the apple cider: Pour 1 ¼ cups of cider into a small saucepan. Bring to a gentle simmer over medium heat, then lower heat and let bubble for 12-15 minutes until reduced to about ½ cup. Set aside ¼ cup for the glaze and let the rest cool for 5 minutes.
  2. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  3. In a large bowl, whisk together all-purpose flour, whole wheat pastry flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Make a well in the center of the dry ingredients. Pour in the cooled reduced cider, egg, melted butter, vanilla, and Greek yogurt. Stir with a rubber spatula until just combined (a few streaks of flour are fine).
  5. Scrape the batter into the prepared pan and spread evenly. Tap the pan gently on the counter to release air bubbles.
  6. Bake on the middle rack for 28-32 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. If browning too fast, tent with foil at 20 minutes.
  7. Let the cake cool in the pan for 10 minutes, then invert onto a cooling rack, peel off parchment, and flip right side up. Cool completely before glazing (about 45 minutes).
  8. Make the glaze: In a small bowl, whisk together the reserved ¼ cup reduced cider, sifted powdered sugar, melted butter, and a pinch of salt until thick but pourable.
  9. Pour the glaze over the cooled cake and spread to the edges. Let set for 10-15 minutes before slicing.

Notes

Don’t skip reducing the apple cider—it concentrates flavor and prevents a soggy cake. Use room temperature ingredients for best texture. Measure flour by spooning and leveling. Let cake cool completely before glazing to avoid a puddle. Cake tastes even better on day two.
