  • 1/4 cup (15g) fresh parsley, finely chopped
  • 1 teaspoon (5g) salt
  • 1/2 teaspoon (2g) black pepper
  • 1/2 teaspoon (2g) dried oregano
  • 1/4 teaspoon (1g) red pepper flakes (optional)
  • 2 tablespoons (30ml) olive oil (for searing)
  • 1 cup (240g) plain full-fat Greek yogurt
  • 1/4 cup (60g) sour cream
  • 1 tablespoon (15ml) lemon juice
  • 1 clove garlic, minced
  • 1/4 cup (15g) fresh dill, chopped
  • 1/4 cup (15g) fresh mint, chopped
  • 1/2 teaspoon (2g) salt
  • 1/4 teaspoon (1g) black pepper
  • 1 cup (240g) cream cheese, softened
  • 1/2 cup (120g) sour cream
  • 1/2 cup (60g) grated Parmesan cheese
  • 1/2 cup (60g) shredded mozzarella cheese
  • 1 cup (30g) frozen spinach, thawed and squeezed dry
  • 1 can (14 ounces/400g) artichoke hearts, drained and chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon (1g) red pepper flakes
  • Salt and pepper to taste
  • 1 baguette, sliced and toasted
  • 1 cup (150g) cherry tomatoes, halved
  • 1 cup (100g) baby carrots
  • 1 cup (100g) celery sticks
  • 1/2 cup (80g) pickled peppers (banana peppers or pepperoncini)
  • 1/2 cup (80g) olives (mixed varieties)
  • 1/2 cup (60g) nuts (almonds or walnuts)
  • Fresh herbs for garnish (parsley, dill, rosemary)

Instructions

  1. Preheat oven to 400°F (200°C). In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, milk, beaten egg, minced garlic, parsley, salt, pepper, oregano, and red pepper flakes (if using). Mix gently with your hands until just combined. Roll into 1.5-inch (4cm) balls (about 20-24 meatballs).
  2. Heat olive oil in a large skillet over medium-high heat. Working in batches, sear meatballs for 2-3 minutes per side until golden brown. Transfer to a parchment-lined baking sheet. Bake for 12-15 minutes until cooked through (internal temperature reaches 165°F/74°C).
  3. While meatballs bake, make the cool yogurt dip: In a small bowl, combine Greek yogurt, sour cream, lemon juice, minced garlic, dill, mint, salt, and pepper. Stir until smooth. Cover and refrigerate until ready to serve.
  4. Make the warm spinach-artichoke dip: In a small saucepan over medium heat, combine softened cream cheese, sour cream, Parmesan, and mozzarella. Stir until melted and smooth. Add squeezed-dry spinach, chopped artichoke hearts, minced garlic, and red pepper flakes. Cook for 3-4 minutes until heated through and bubbly. Season with salt and pepper. Keep warm in a 200°F (95°C) oven if desired.
  5. Prep board components: Slice baguette into 1/2-inch (1cm) slices and toast lightly (about 5 minutes at 350°F/175°C). Halve cherry tomatoes. Cut carrots and celery into 3-inch (7.5cm) sticks. Drain pickled peppers and olives.
  6. Assemble the grazing board: Place a large board or platter on the counter. Set dip bowls on opposite ends. Arrange warm meatballs in a cluster near one dip. Fan out baguette slices along one edge. Group vegetables in small clusters. Fill gaps with pickled peppers, olives, and nuts. Garnish with fresh herbs.

Notes

For the meatballs, use 80/20 ground beef for juiciness; leaner blends will dry out. Full-fat Greek yogurt is essential for the cool dip to prevent it from becoming watery. Squeeze spinach very dry for the warm dip to avoid a runny texture. The meatballs can be made up to 2 days in advance and reheated. The dips are best made fresh on the day of serving. For a gluten-free version, use gluten-free breadcrumbs and serve with rice crackers or veggie sticks.
