Ingredients

Scale
  • 1 large round sourdough bread loaf (about 89 inches wide)
  • 2 cups cooked shredded chicken (rotisserie or canned, drained well)
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1/2 cup ranch dressing
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup melted unsalted butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 tablespoons chopped green onions
  • Optional: 1/4 cup crumbled blue cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the bread bowl: Using a serrated knife, cut a circle out of the top of the sourdough loaf (about 4-5 inches across) at a slight angle to create a lid. Remove the soft bread from inside, leaving a 1-inch thick wall all around. Save the bread pieces for dipping or croutons.
  3. Make the garlic butter: In a small bowl, mix melted butter with garlic powder and onion powder. Brush this mixture all over the inside of the bread bowl and the cut side of the lid.
  4. Toast the bread bowl: Place the hollowed bread bowl and lid on a baking sheet. Bake for 8-10 minutes until the butter is absorbed and the bread feels slightly crispy.
  5. Mix the filling: In a large mixing bowl, combine softened cream cheese, buffalo sauce, and ranch dressing until smooth. Fold in shredded chicken, 1 cup of mozzarella, and all of the cheddar cheese until evenly coated.
  6. Fill the bread bowl: Spoon the buffalo chicken mixture into the toasted bread bowl, pressing gently to fill all nooks. Leave about 1/2 inch of space at the top. Top with remaining 1/2 cup of mozzarella cheese and optional blue cheese crumbles.
  7. Bake: Place the filled bread bowl on the baking sheet. Bake at 350°F for 20-25 minutes until the cheese is melted and bubbly and the filling is heated through. If the top browns too quickly, tent loosely with foil for the last 10 minutes.
  8. Rest and garnish: Let the bread bowl rest for 5 minutes after baking. Sprinkle chopped green onions over the top. Place the lid at a jaunty angle or serve alongside.
  9. Serve immediately: Place on a cutting board or large plate. Guests can pull off pieces of the bread bowl to scoop up the dip. When the bread runs out, serve the remaining dip with crackers or celery sticks.

Notes

Don’t skip the pre-toast step—it creates a moisture barrier that prevents the bread from getting soggy. Soften cream cheese properly (30-40 minutes at room temperature) to avoid lumps. Let the bread bowl rest for 5 minutes before serving to allow the filling to set. For a milder version, use 1/4 cup buffalo sauce and 3/4 cup ranch. For extra heat, use 3/4 cup buffalo sauce and 1/4 cup ranch, plus pickled jalapeños.
