These Spooky Monster Eyeball Caprese Skewers are a quick and easy Halloween appetizer that looks impressively creepy but takes almost zero effort. Creamy mozzarella, sweet cherry tomatoes, and fresh basil are dressed up with black olive ‘pupils’ and balsamic ‘blood’ veins for a delightfully spooky treat.

  • 16–20 fresh mozzarella balls (bocconcini or ciliegine), drained
  • 16–20 cherry tomatoes, washed and dried
  • 16–20 medium-sized fresh basil leaves, washed and dried
  • 8–10 large black olives (canned or jarred), pitted, sliced into thin rounds
  • 2–3 tablespoons balsamic glaze (balsamic reduction)
  • 16–20 toothpicks or short bamboo skewers
  • Pinch of flaky sea salt
  • Freshly cracked black pepper to taste
  • Optional: extra virgin olive oil for drizzling
  • Optional: fresh oregano or thyme leaves for garnish
  • Optional: red pepper flakes for heat

Instructions

  1. Prep your ingredients: Drain the mozzarella balls and pat them dry with paper towels. Wash and dry the cherry tomatoes and basil leaves. Drain and pat dry the olives, then slice each olive crosswise into thin rounds (about 1/8 inch thick). Set the olive slices aside on a small plate.
  2. Assemble the eyeballs: Take one mozzarella ball and gently press one olive slice onto the center. Place a basil leaf on your work surface, then put the mozzarella ball (olive side up) on top of the basil. Thread a toothpick or skewer through the basil, then through the mozzarella ball, and finally through a cherry tomato. Repeat for all skewers.
  3. Arrange and drizzle: Place the assembled skewers on a serving platter. Drizzle balsamic glaze over the top in a zigzag pattern. Finish with a pinch of flaky sea salt and a crack of black pepper.
  4. Serve immediately or chill: Best served right away. If making ahead, assemble without glaze and refrigerate for up to 2 hours; add glaze just before serving.

Notes

Pat mozzarella dry so olive slices stick. Use cold mozzarella for easier handling. Drizzle glaze just before serving to prevent soggy basil. For uniform look, pick similar-sized tomatoes and mozzarella balls.
