Individual, handheld charcuterie cups made with waffle cones, filled with savory meats, cheeses, and spooky accents. Perfect for Halloween parties, these no-utensil appetizers are prep-ahead friendly and visually stunning.

  • 12 standard-sized waffle cones
  • 2 cups fresh arugula or mixed baby greens
  • 12 slices Genoa salami or soppressata
  • 6 thin slices prosciutto, torn in half
  • 4 ounces sharp cheddar cheese, cut into 1/2-inch cubes
  • 4 ounces smoked Gouda cheese, cut into 1/2-inch cubes
  • 24 slices mini pepperoni
  • 1/2 cup pitted black olives
  • 1 small red bell pepper, cut into thin strips
  • 1/4 cup dried cranberries
  • 2 tablespoons roasted, salted pumpkin seeds (pepitas)
  • 1/2 cup ranch dressing
  • A few dashes hot sauce

Instructions

  1. Line a baking sheet with parchment paper. Arrange all ingredients in small bowls for easy assembly.
  2. In a small bowl, mix ranch dressing with a few dashes of hot sauce. Transfer to a piping bag or zip-top bag with a corner snipped off.
  3. Hold a waffle cone upright. Pipe about 1 tablespoon of the spiked ranch into the bottom of the cone.
  4. Gently stuff a small handful of arugula or mixed greens into the cone on top of the dip.
  5. Place one folded salami rose at the back of the cone, add a torn piece of prosciutto, and tuck a few mini pepperoni slices into the gaps.
  6. Drop in 3-4 cubes of cheddar and 3-4 cubes of smoked Gouda, distributing evenly.
  7. Add a few black olives, a strip of red bell pepper hanging over the edge, and sprinkle in dried cranberries and pumpkin seeds.
  8. Repeat for remaining 11 cones. Place each finished cone on the prepared baking sheet.
  9. Refrigerate assembled cones for at least 30 minutes (up to 4 hours) before serving.
  10. Remove from fridge 10 minutes before serving. Arrange on a platter and serve.

Notes

Don’t overfill cones; leave about an inch of space at the top. Use sturdy waffle cones to prevent breakage. Prep ingredients the night before for faster assembly. Serve cold; if party is warm, place platter on ice. Make extra dip for serving on the side.
