A happy accident turned into the best deviled eggs you’ll ever bring to a party. Creamy, tangy filling topped with crunchy everything bagel seasoning and a simple spider web design that looks impressive but takes minutes to create.

Ingredients

Scale
  • 12 large eggs
  • 1/3 cup (80 ml) mayonnaise, full-fat
  • 1 tablespoon (15 ml) Dijon mustard
  • 1 teaspoon (5 ml) apple cider vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper, freshly ground
  • 2 tablespoons (30 g) everything bagel seasoning
  • 2 tablespoons (30 ml) plain Greek yogurt (optional)
  • A few dashes hot sauce (optional)
  • 1 tablespoon fresh chives, finely chopped (optional)

Instructions

  1. Place the 12 eggs in a large pot and cover with cold water by about an inch. Bring to a rolling boil over high heat. Once boiling, cover the pot, remove from heat, and let sit for exactly 12 minutes.
  2. While eggs rest, fill a large bowl with ice and cold water. After 12 minutes, transfer eggs to the ice bath using a slotted spoon. Let sit for at least 5 minutes.
  3. Gently tap each egg on the counter to crack the shell, then roll between palms to loosen. Peel under running cold water.
  4. Slice each egg in half lengthwise with a sharp knife. Carefully remove yolks and place in a medium mixing bowl. Arrange egg white halves on a serving platter, cut side up.
  5. Add mayonnaise, Dijon mustard, apple cider vinegar, salt, black pepper, Greek yogurt (if using), and hot sauce (if using) to the bowl with yolks. Mash together with a fork until smooth and creamy. Taste and adjust seasoning.
  6. Transfer yolk mixture to a piping bag or zip-top bag with a small corner snipped off. Pipe filling into each egg white half, mounding slightly.
  7. Sprinkle a generous pinch of everything bagel seasoning over each filled egg. Using a toothpick or skewer, gently drag a line from the center outward to the edge. Repeat in a circular pattern, spacing lines evenly, to create a web design.
  8. Sprinkle chopped fresh chives over the top. Serve immediately or refrigerate until ready to serve.

Notes

Boil and peel eggs up to two days ahead. Assemble the day of the event. For perfect hard-boiled eggs, use the 12-minute resting method. Older eggs peel easier. If filling is too thick, add a splash of pickle juice or more vinegar. If too thin, add more mayonnaise. The spider web design is forgiving; if you mess up, smooth the filling and try again.
