Ingredients

Scale
  • 1 pound fresh Mexican chorizo, casings removed
  • 1 small yellow onion, finely diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 (10-ounce) can diced tomatoes with green chiles (like Rotel), undrained
  • 1 (4-ounce) can diced green chiles, undrained
  • 1 pound block processed cheese (like Velveeta), cut into 1-inch cubes
  • 8 ounces sharp cheddar cheese, freshly shredded
  • 1 cup whole milk
  • 1/2 cup sour cream
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • 2 green onions, sliced (for garnish)
  • 1 jalapeño, thinly sliced (for garnish)

Instructions

  1. Cook the chorizo (5-7 minutes): Place a large skillet over medium-high heat. Add the chorizo, breaking it up with a wooden spoon as it cooks. Cook for about 5-7 minutes, stirring occasionally, until browned and cooked through. Use a slotted spoon to transfer the cooked chorizo to a plate, leaving about 2 tablespoons of rendered fat in the skillet.
  2. Sauté the aromatics (3-4 minutes): Reduce heat to medium. Add the diced onion to the skillet with the chorizo fat. Cook for 2-3 minutes, stirring frequently, until softened and translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Add the tomatoes and chiles (2 minutes): Pour in the undrained diced tomatoes with green chiles and the diced green chiles. Stir and let cook for about 2 minutes, allowing some liquid to evaporate until slightly thickened.
  4. Start the cheese sauce (5-7 minutes): Transfer the tomato mixture to a large saucepan or Dutch oven. Add the cubed processed cheese, shredded cheddar cheese, and whole milk. Place over medium-low heat. Stir constantly as the cheese melts until smooth and creamy.
  5. Add the seasonings and chorizo (2 minutes): Once cheese is fully melted and sauce is smooth, stir in smoked paprika, ground cumin, chili powder, and cayenne pepper (if using). Add the cooked chorizo back to the pot. Stir until well combined. Taste and adjust seasoning with salt and pepper.
  6. Finish with sour cream (1 minute): Remove the pot from the heat. Stir in the sour cream until fully incorporated.
  7. Serve immediately or keep warm: Pour into a serving bowl and garnish with fresh cilantro, sliced green onions, and jalapeño slices. For parties, transfer to a slow cooker set to ‘warm’ and stir occasionally.

Notes

Don’t skip browning the chorizo for deeper flavor. Always use freshly grated cheese for smooth melting. Keep heat low and slow to prevent grainy texture. For parties, keep warm in a slow cooker on ‘warm’ setting, not high. Leftovers can be refrigerated for up to 4 days; reheat gently with a splash of milk.
