Savory Garlic Butter Steak Bites with Mushrooms

Quick and easy steak bites seared to perfection and tossed in a rich garlic butter mushroom sauce, perfect for cozy dinners or busy weeknights.

  • 1 lb sirloin steak or ribeye, cut into 1-inch cubes
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter, divided
  • 8 oz cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Pat the steak cubes dry with paper towels to remove excess moisture. Season generously with salt and freshly ground black pepper.
  2. Place a heavy-bottomed skillet or cast-iron pan over medium-high heat and add the olive oil. Heat until shimmering but not smoking, about 2 minutes.
  3. Add half the steak pieces in a single layer without overcrowding. Sear undisturbed for about 2 minutes until browned on one side, then flip and sear the other side for another 2 minutes for medium-rare. Remove and set aside. Repeat with remaining steak bites.
  4. Reduce heat to medium. Add 1 tablespoon butter and the sliced mushrooms to the same pan. Cook, stirring occasionally, until mushrooms are golden and moisture evaporates, about 5-7 minutes.
  5. Stir in minced garlic and thyme leaves. Cook for about 1 minute until fragrant, being careful not to burn the garlic.
  6. Add remaining 2 tablespoons butter to the pan. Stir gently as it melts, combining with mushrooms and garlic to create a sauce. Optionally add a pinch of red pepper flakes.
  7. Return steak bites to the pan with the sauce. Toss gently to coat and heat through for 1-2 minutes.
  8. Remove from heat, sprinkle with chopped fresh parsley, and serve immediately.

Notes

Avoid overcrowding the pan when searing steak to ensure a good crust. Use batches if needed. Pat steak dry before cooking to remove moisture. Add garlic last to prevent burning. For dairy-free, substitute butter with vegan butter or coconut oil. For more well-done steak, add an extra minute per side during searing.
