Refreshing Watermelon-Lime Granita

A simple, no-ice-cream-maker frozen dessert featuring juicy watermelon and bright lime, perfect for cooling down on hot summer days with a flaky, icy texture.

  • 6 cups cubed seedless watermelon (about 1 small-medium melon)
  • 1/4 cup fresh lime juice (about 2 large limes)
  • 1/3 cup granulated sugar (adjust to taste or substitute with honey or agave)
  • 1/2 cup water
  • Pinch of salt (optional)

Instructions

  1. Cube about 6 cups of seedless watermelon, removing any seeds.
  2. Place the watermelon cubes in a blender and pulse until smooth. Optionally strain through a fine mesh strainer for a smoother texture.
  3. In a small saucepan, combine 1/3 cup sugar and 1/2 cup water. Heat over medium, stirring until sugar dissolves completely. Let cool to room temperature.
  4. In a large mixing bowl, combine the watermelon puree, cooled simple syrup, fresh lime juice, and a pinch of salt. Stir well to blend all flavors evenly.
  5. Pour the mixture into a large shallow metal or glass bowl and place it uncovered in the freezer.
  6. After 45-60 minutes, when edges start to freeze, use a fork to scrape and break up the ice crystals. Return to freezer.
  7. Every 30 minutes, scrape the granita with a fork to fluff and break up ice crystals. Repeat 3-4 times over 2-3 hours until fluffy and fully frozen.
  8. Once the granita reaches a light, fluffy texture, scoop into chilled glasses or bowls. Garnish with lime wedges or fresh mint if desired.

Notes

Scraping the granita regularly is key to achieving the flaky, crunchy texture. Use fresh lime juice for best flavor. Do not cover the bowl while freezing to avoid hard freezing. A metal bowl chills faster than glass and speeds up the freezing process. Adjust sugar based on watermelon sweetness. Can substitute sugar with honey, agave, maple syrup, or coconut sugar for variations.
