A bright, cool, and bursting with fresh flavor summer slushie made with fresh strawberries, zesty lemonade, and cooling mint. Easy to make and perfect for summer gatherings.

  • 2 cups fresh strawberries, hulled and halved (frozen can be used)
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • 1/4 cup granulated sugar (or honey/agave syrup as a substitute)
  • 1012 fresh mint leaves, gently muddled
  • 1 cup cold water
  • 3 cups crushed ice (or ice cubes crushed)

Instructions

  1. Wash, hull, and halve about 2 cups of fresh strawberries. If using frozen berries, let them thaw slightly for easier blending.
  2. Place 10-12 fresh mint leaves in a sturdy glass or bowl. Using a muddler or the back of a wooden spoon, press gently to bruise the leaves and release the oils without tearing them apart.
  3. In your blender, combine freshly squeezed lemon juice (about 1/2 cup), 1/4 cup granulated sugar (or preferred sweetener), and 1 cup of cold water. Blend briefly until sugar dissolves and mixture is smooth.
  4. Add the prepared strawberries and muddled mint leaves into the blender. Pulse a few times to combine, but don’t overblend; leave tiny bits of strawberry for texture.
  5. Add about 3 cups of crushed ice to the blender. Blend on high speed until the mixture reaches a thick, icy slush consistency β€” smooth but still fluffy. Adjust with more water or ice as needed.
  6. Taste and adjust sweetness or mint flavor by adding a teaspoon of sugar/honey or a few extra mint leaves and pulse again.
  7. Pour into tall glasses, garnish with a sprig of mint or a lemon wheel, and serve immediately.

Notes

Pulse ice in short bursts to avoid overheating the blender. Muddle mint gently to avoid bitterness. Adjust sweetness to taste. Use fresh lemon juice and mint for best flavor. Can substitute sparkling water for half the cold water for a fizzy version. Store leftovers in fridge up to 24 hours and re-blend with ice before serving.
