  • 3 ounces (85 grams) semi-sweet chocolate, chopped or chips
  • 3/4 cup (150 grams) granulated sugar
  • 1/4 cup (25 grams) unsweetened cocoa powder
  • 1/2 cup (65 grams) all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 large egg, room temperature

Instructions

  1. Preheat your oven to 325Β°F (163Β°C). Line a 6×6-inch pan with parchment paper, leaving some overhang for easy removal.
  2. Melt the butter and chopped chocolate together using a microwave-safe bowl in 20-second bursts, stirring in between, or melt gently in a double boiler until smooth and glossy.
  3. Whisk the sugar into the melted chocolate mixture while it is still warm but not hot.
  4. Add the egg and vanilla extract. Whisk vigorously until fully combined and the batter looks glossy.
  5. Sift together the cocoa powder, flour, and salt. Gradually fold these dry ingredients into the wet mixture using a spatula, being careful not to overmix.
  6. Pour the batter into the prepared pan and smooth the top with a spatula or back of a spoon.
  7. Bake for 20-25 minutes. Start checking at 20 minutes by inserting a toothpick into the center; it should come out with a few moist crumbs but not wet batter.
  8. Let the brownies cool completely in the pan, about 30 minutes. Use the parchment paper to lift them out and cut into 9 squares.

Do not overmix the batter to keep brownies fudgy. Use room temperature eggs to prevent chocolate from seizing. Watch baking time closely to avoid dry brownies.
