  • 1 cup (240g) pumpkin purée (not pumpkin pie filling)
  • ½ cup (120g) plain full-fat Greek yogurt
  • ½ cup (100g) granulated sugar
  • ¼ cup (50g) packed brown sugar
  • 2 large eggs, room temperature
  • ⅓ cup (80ml) vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, pumpkin pie spice, and cinnamon until evenly combined. Set aside.
  3. In a larger bowl, whisk together the pumpkin purée, Greek yogurt, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth and fully combined.
  4. Pour the dry ingredients into the wet ingredients. Use a rubber spatula to fold gently until just combined. A few lumps are fine—do not over-mix.
  5. Let the batter rest for 5 minutes to allow the flour to hydrate fully.
  6. Divide the batter evenly among the muffin cups, filling each about ¾ full. A cookie scoop or two spoons works well.
  7. Bake for 18-22 minutes, rotating the pan halfway through, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Cool in the pan for 5 minutes, then transfer the muffins to a wire rack to cool completely.
