  • 2 tablespoons unsalted butter (for glaze)
  • 1 tablespoon water (for glaze)
  • Pinch of salt (for glaze)
  • Optional: fresh fig slices and flaky sea salt for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a small bowl, combine quartered figs with ¼ cup honey. Let sit for 10-15 minutes to bloom.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In a large bowl, beat softened butter and granulated sugar with an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  5. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  6. With mixer on low, add flour mixture in three parts, alternating with buttermilk in two parts, starting and ending with flour. Mix just until combined. Fold in honey-soaked figs with a rubber spatula.
  7. Pour batter into prepared pan and spread evenly. Bake for 35-40 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs. Cool in pan for 10 minutes, then transfer to a cooling rack.
  8. While cake is still warm, make glaze: In a small saucepan, combine ¼ cup honey, 2 tablespoons butter, 1 tablespoon water, and a pinch of salt. Heat over medium-low, stirring constantly, until butter melts and mixture is smooth and bubbly, about 2-3 minutes. Remove from heat.
  9. Place warm cake on a serving plate or wire rack over a baking sheet. Slowly pour warm glaze over top, letting it cascade down sides. Use a pastry brush to spread evenly if needed. Let absorb for at least 15 minutes.
  10. Garnish with fresh fig slices and a sprinkle of flaky sea salt if desired. Serve warm or at room temperature.

Notes

Room temperature ingredients are crucial for a light texture. Don’t overmix the batter. The glaze should be poured over a warm (not hot) cake for best absorption. Dried figs should be soaked in warm water if hard. For a dairy-free version, use vegan butter sticks and plant-based milk with vinegar.
