Perfect Berry Flag Sheet Cake Recipe with Easy Cream Cheese Frosting

A quick and easy vanilla sheet cake decorated with fresh berries arranged in a patriotic flag pattern and topped with a fluffy cream cheese frosting. Perfect for summer celebrations and crowd-pleasing dessert.

  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup (227g) unsalted butter, softened
  • 1 ¾ cups (350g) granulated sugar
  • 4 large eggs, room temperature
  • 1 tbsp vanilla extract
  • 1 cup (240ml) whole milk, room temperature (can swap with almond milk for dairy-free)
  • 16 oz (450g) cream cheese, softened
  • ½ cup (113g) unsalted butter, softened
  • 4 cups (480g) powdered sugar, sifted
  • 1 tbsp vanilla extract
  • Pinch of salt
  • 1 ½ cups fresh strawberries, sliced
  • 1 ½ cups fresh blueberries
  • Optional: ½ cup raspberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch sheet pan lightly with butter or non-stick spray and line with parchment paper if desired.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat softened butter with sugar for 3-4 minutes until light and fluffy.
  4. Add eggs one at a time, mixing after each addition. Stir in vanilla extract.
  5. Add dry ingredients in three batches, alternating with milk, starting and ending with dry ingredients. Mix gently until just combined.
  6. Pour batter evenly into prepared pan and smooth the top. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool cake in pan for 15 minutes, then transfer to a cooling rack to cool completely.
  8. Beat cream cheese and softened butter until smooth and creamy (2-3 minutes). Gradually add powdered sugar and mix until fluffy. Stir in vanilla extract and pinch of salt.
  9. Spread a thick, even layer of frosting over the cooled cake using an offset spatula.
  10. Arrange blueberries in the top left corner of the cake. Arrange sliced strawberries in rows for the stripes, alternating with white frosting stripes showing through. Optionally add raspberries for extra red texture.
  11. If berries are juicy, pat dry before placing to avoid soggy spots. Chill cake for 15 minutes if frosting softens too much before serving.
