Perfect Apple Cider Mimosa Bar for Fall Brunch

This apple cider mimosa bar is a full experience that brings the cozy, crisp feeling of autumn right into your glass. It’s a simple, beautiful drink that tastes like everything we love about fall, perfect for any gathering.

  • 4 cups (960 ml) apple cider, chilled
  • 1 bottle (750 ml) dry sparkling wine or Champagne (brut), chilled
  • 1/2 cup (120 ml) spiced rum or bourbon (optional)
  • 2–3 tablespoons (30–45 ml) maple syrup (optional)
  • 2 tablespoons (30 ml) fresh lemon juice (from 1 lemon)
  • 4–6 fresh rosemary sprigs
  • 4–6 cinnamon sticks
  • 1–2 apples (Honeycrisp or Fuji), thinly sliced
  • 4–6 star anise pods (optional)
  • 2 tablespoons coarse sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Prepare the garnish bar: Wash and dry rosemary sprigs and apple. Slice apple into thin rounds or half-moons. Toss apple slices in a little lemon juice to prevent browning. Place cinnamon sticks, star anise, and rosemary in separate small bowls. Arrange apple slices on a small plate.
  2. Rim the glasses: On a small plate, mix 2 tablespoons coarse sugar with 1 teaspoon ground cinnamon. Run a lemon wedge around the rim of each glass, then dip the rim into the cinnamon sugar mixture. Set glasses aside.
  3. Mix the base: In a large pitcher, combine 4 cups chilled apple cider, fresh lemon juice, and maple syrup (if using). Stir gently. If adding spiced rum or bourbon, pour it in and stir again.
  4. Set up the bar: Place the pitcher of apple cider base on the serving table. Next to it, place the bottle of chilled sparkling wine. Arrange rimmed glasses and garnish bowls nearby.
  5. Assemble a drink: Fill a rimmed glass about halfway with the apple cider base. Top it off with sparkling wine. A 1:1 ratio is a good starting point.
  6. Garnish and serve: Let guests customize their drink with a cinnamon stick, rosemary sprig, apple slice, or star anise. Serve immediately.

Notes

Use a dry (brut) sparkling wine to balance the sweetness of the apple cider. Chill the apple cider and sparkling wine for at least 2 hours before serving. Do not mix the wine into the pitcher; let guests add it themselves to keep the bubbles fresh. For a non-alcoholic version, substitute sparkling apple cider or ginger beer.
