Light & Flaky Cranberry Brie Bites

These light and flaky cranberry brie bites are the perfect easy appetizer, featuring buttery puff pastry cups filled with creamy brie and sweet-tart cranberry sauce, finished with fresh rosemary and flaky sea salt.

  • 1 package (17.3 oz) frozen puff pastry sheets, thawed (such as Pepperidge Farm)
  • 8 ounces brie cheese, cold
  • 1/2 cup whole berry cranberry sauce
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 large egg (for egg wash)
  • Flaky sea salt (such as Maldon), for finishing

Instructions

  1. Preheat oven to 400Β°F (200Β°C). Lightly grease a 24-cup mini muffin pan with butter or non-stick cooking spray.
  2. Lightly flour your work surface. Unfold one sheet of thawed puff pastry. If cracked at seams, gently press back together. Cut into 12 equal squares (3×4 grid). Repeat with second sheet for 24 squares total.
  3. Gently press each puff pastry square into a well of the prepared mini muffin pan, leaving corners pointing up to create a bowl shape. If pastry feels too soft, refrigerate pan for 5 minutes.
  4. Cut cold brie into 24 small cubes, about 1/2-inch each, keeping the rind on.
  5. Place one cube of cold brie into each pastry cup. Top each with about 1 teaspoon cranberry sauce.
  6. In a small bowl, whisk egg with 1 tablespoon water. Brush edges of each pastry cup with egg wash.
  7. Place muffin pan on a baking sheet and bake for 15-18 minutes, until pastry is puffed and deeply golden brown.
  8. Let cool in pan for exactly 5 minutes. Use a small spoon or offset spatula to gently lift bites onto a serving platter. Sprinkle with fresh rosemary and a pinch of flaky sea salt while warm.

Notes

Keep brie cold until ready to use to prevent leaking. Thaw puff pastry in the fridge overnight. Let bites rest in pan for 5 minutes before removing. For best results, serve warm.
