Instructions

  1. In a small bowl, combine sugar, cinnamon, and salt. Set aside.
  2. Place a non-stick skillet over medium heat and melt the butter, about 30 seconds.
  3. Add pumpkin seeds to the melted butter, stir to coat, and spread in a single layer. Toast for 2 minutes, stirring constantly, until golden and fragrant.
  4. Sprinkle the cinnamon-sugar mixture over the hot seeds and stir vigorously for 30-60 seconds until glossy and coated.
  5. Immediately pour seeds onto a paper towel-lined plate in a single layer. Let cool for at least 5 minutes until crisp.

Notes

For best results, use raw hulled pepitas. If using fresh pumpkin seeds, wash and pat completely dry. Do not walk away during cooking; stir constantly. Let seeds cool completely for maximum crispiness. Store in an airtight container at room temperature for up to 5 days. To re-crisp, bake at 300Β°F for 3-4 minutes.
