  • 3 cloves garlic, minced

  • 2 cups whole milk, warmed
  • 1 cup low-sodium chicken or vegetable broth
  • 1 teaspoon fresh thyme leaves
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon salt, plus more to taste
  • ¼ teaspoon ground nutmeg
  • 4 large shallots, thinly sliced into rings (about 1 ½ cups)
  • ½ cup all-purpose flour (for shallots)

  • Vegetable or canola oil for frying
  • ½ cup panko breadcrumbs
  • 2 tablespoons melted butter
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Bring a large pot of water to a rolling boil and add 1 tablespoon of kosher salt. Drop in the trimmed green beans and cook for exactly 3 minutes. While they’re boiling, prepare a large bowl of ice water. Using tongs or a slotted spoon, transfer the beans immediately to the ice bath. Let them sit for 2-3 minutes, then drain well and pat dry with a clean kitchen towel. Set aside.
  2. Pour about 2 inches of oil into a small pot and heat over medium heat to 325°F. In a shallow bowl, whisk together the flour, salt, and pepper. Toss the sliced shallots in the flour mixture, shaking off any excess. Working in batches, fry the shallots for 2-3 minutes, stirring occasionally, until golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate. Sprinkle with a pinch of salt while still warm. Set aside.
  3. In a large skillet, melt the butter over medium heat. Add the sliced mushrooms and cook for 5-6 minutes, stirring occasionally, until they release their liquid and start to brown.
