  • 2 medium sweet potatoes, peeled and diced into Β½-inch cubes
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 cups low-sodium chicken broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (or to taste)
  • Β½ teaspoon black pepper (or to taste)
  • 1 tablespoon apple cider vinegar
  • Optional toppings: Greek yogurt, shredded cheddar cheese, fresh cilantro, sliced avocado, diced red onion, lime wedges

Instructions

  1. Prep your ingredients first. Dice the onion, mince the garlic, peel and cube the sweet potatoes into Β½-inch pieces. Drain and rinse the kidney beans. Open the canned tomatoes and tomato sauce.
  2. Heat your dutch oven or pot over medium-high heat. Add the ground turkey and break it apart with your wooden spoon. Cook for 5-7 minutes, stirring occasionally, until the turkey is browned and no longer pink.
  3. Add the diced onion to the pot with the browned turkey. Cook for 3-4 minutes, stirring frequently, until the onion softens and becomes translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
  4. Sprinkle the chili powder, cumin, smoked paprika, dried oregano, salt, and pepper over the meat and onions. Stir constantly for about 1 minute to bloom the spices.
  5. Pour in the diced tomatoes (with their juices), tomato sauce, and chicken broth. Stir well, scraping the bottom of the pot to release any browned bits. Add the cubed sweet potatoes and stir to combine.
  6. Increase the heat to high and bring the chili to a gentle boil. Once it’s bubbling, reduce the heat to medium-low so it’s at a steady simmer. Cover the pot with the lid slightly ajar.
  7. Let the chili simmer for 20-25 minutes, stirring occasionally, until the sweet potatoes are tender and easily pierced with a fork.
  8. Stir in the drained and rinsed kidney beans. Let them heat through for 2-3 minutes. Remove the pot from the heat and stir in the apple cider vinegar.
  9. Taste and adjust seasoning with more salt, pepper, or cayenne if desired.
  10. Let the chili rest off the heat for 5-10 minutes before serving. Ladle into bowls and add your favorite toppings.

Notes

For a thicker chili, mash some sweet potato cubes against the side of the pot during the last 5 minutes of cooking. The chili tastes even better the next day. Freezes well for up to 3 months.
