  • 2 large eggs, lightly beaten

  • 2 tablespoons Worcestershire sauce
  • 3 tablespoons tomato paste
  • 1 tablespoon Dijon mustard
  • 1/4 cup fresh parsley, chopped (optional)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • For the Glaze:
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan with cooking spray or olive oil. Optionally, line the bottom with parchment paper for easy removal.
  2. Heat 1 tablespoon of olive oil in a small skillet over medium heat. Add the diced onion and cook for 4-5 minutes until translucent. Add the minced garlic and cook for 30 seconds until fragrant. Remove from heat and let cool slightly.
  3. In a large mixing bowl, combine the rolled oats, salt, pepper, smoked paprika, and dried thyme. Stir to distribute the seasonings evenly.
  4. In a separate small bowl, whisk together the eggs, milk, Worcestershire sauce, and Dijon mustard until well combined.
  5. Add the ground turkey to the bowl with the oat mixture. Add the sautéed onions and garlic, chopped parsley, and the wet ingredient mixture. Use your hands to gently mix just until combined (about 20-30 seconds). Do not overmix.
  6. Transfer the mixture to the prepared loaf pan. Gently press it into an even shape, avoiding air pockets. Do not pack it down too firmly.
  7. In a small bowl, whisk together the ketchup, brown sugar, apple cider vinegar, and Worcestershire sauce for the glaze. Set aside about 2 tablespoons for serving if desired.
  8. Bake the meatloaf for 45 minutes. Remove from the oven and spread about half the glaze evenly over the top. Return to the oven and bake for another 15 minutes. Apply the remaining glaze and bake for a final 10-15 minutes, until the internal temperature reaches 165°F (74°C). Total baking time is about 70-75 minutes.
  9. Let the meatloaf rest in the pan for 10-15 minutes before slicing. This allows the juices to redistribute.
  10. Carefully transfer the meatloaf to a cutting board. Slice into 1-inch thick pieces and serve warm.
