  • 1 cup (225g) low-fat or full-fat cottage cheese (small-curd preferred)
  • 2 tablespoons honey or pure maple syrup (adjust to taste)
  • 1 teaspoon pure vanilla extract
  • 1/4 cup (30g) almond flour or oat flour
  • 2 tablespoons natural peanut butter or any nut butter (optional)
  • Pinch of salt
  • 1/3 cup (60g) dark chocolate chips (70% cocoa preferred)

Instructions

  1. Place 1 cup (225g) of cottage cheese in your food processor or blender. Pulse or blend for about 1 to 2 minutes until smooth and creamy with no lumps. Add a teaspoon of milk if too thick.
  2. Add 2 tablespoons honey and 1 teaspoon vanilla extract to the blended cottage cheese. Blend again for 30 seconds until fully combined and fragrant.
  3. Add 1/4 cup (30g) almond flour, 2 tablespoons natural peanut butter (optional), and a pinch of salt. Pulse 3-4 times until just combined, avoiding over-blending.
  4. Transfer mixture to a bowl and gently fold in 1/3 cup (60g) dark chocolate chips using a rubber spatula.
  5. Refrigerate the dip for at least 30 minutes before serving. Serve with graham crackers, apple slices, or pretzel sticks.

Notes

Use small-curd cottage cheese for creamier texture. Adjust sweetness with honey or maple syrup. Fold in chocolate chips last to keep them intact. Chill dip for best texture. Stir in a teaspoon of milk if dip thickens too much after refrigeration.
