  • 1 large round sourdough bread loaf (about 1 pound or 450g)
  • 3 tablespoons unsalted butter, melted
  • 1 clove garlic, minced
  • 8 ounces (225g) cream cheese, softened
  • 1/2 cup (120ml) sour cream
  • 1/4 cup (60ml) mayonnaise
  • 1 cup (100g) frozen chopped spinach, thawed and squeezed dry
  • 1 can (14 ounces or 400g) artichoke hearts, drained and roughly chopped
  • 1 cup (100g) shredded mozzarella cheese
  • 1/2 cup (50g) grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish, optional)
  • Extra red pepper flakes (for garnish, optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Using a serrated knife, cut a circle about 2 inches from the edge of the bread loaf. Cut straight down about 1.5 inches deep, angling the knife slightly inward to create a lid. Remove the top and set it aside. Pull out the soft bread from the inside, leaving a 1-inch thick shell. Reserve the removed bread pieces for dipping.
  3. In a small skillet or microwave-safe bowl, combine the melted butter and 1 minced garlic clove. Brush the inside of the bread bowl and the cut side of the lid with this mixture. Place the bread bowl and lid on a baking sheet and bake for 5 minutes.
  4. While the bread is toasting, take the thawed frozen spinach and squeeze it dry using a clean kitchen towel. Squeeze until no more water drips out.
  5. In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Blend until smooth and creamy. Add the remaining minced garlic, salt, black pepper, and red pepper flakes (if using), and mix again.
  6. Fold in the squeezed spinach, chopped artichoke hearts, mozzarella cheese, and Parmesan cheese until evenly distributed.
  7. Remove the par-baked bread bowl from the oven. Spoon the dip mixture into the hollowed-out bread, mounding it slightly on top. Place the lid on the baking sheet next to the bowl.
  8. Bake for 20-25 minutes, or until the dip is hot and bubbly and the top is golden brown. If the top browns too quickly, tent the bread bowl loosely with aluminum foil for the last 5 minutes.
  9. Remove from the oven and let it rest for 5 minutes. Sprinkle with fresh parsley and extra red pepper flakes if desired. Serve immediately with the reserved bread cubes, crackers, tortilla chips, or vegetable sticks.

Notes

Don’t skip the par-bake step—it prevents the bread from getting soggy. Squeeze the spinach thoroughly to avoid a watery dip. Use room temperature cream cheese for a smooth mixture. The dip is extremely hot right out of the oven; let it cool for a minute before serving.
