  • 4 ounces (about 115g) pepperoni slices, small diameter or quartered if large
  • 2 cups (about 200g) shredded low-moisture part-skim mozzarella cheese
  • 1/2 cup (about 50g) grated Parmesan cheese
  • 1/4 cup (4 tablespoons or 60g) unsalted butter, melted
  • 3 cloves garlic, minced (about 1 tablespoon)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup (about 240ml) marinara sauce, for dipping
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Generously grease a 10-cup bundt pan with butter or nonstick spray.
  2. In a small bowl, combine the melted butter, minced garlic, Italian seasoning, and red pepper flakes (if using). Stir and set aside.
  3. On a lightly floured surface, roll out the pizza dough into a rough 12×8-inch rectangle. Using a sharp knife or kitchen shears, cut the dough into 1.5-inch pieces (about 30 to 35 pieces).
  4. Place all dough pieces in a large bowl. Pour the garlic butter over them and toss gently until every piece is coated.
  5. Arrange half of the butter-coated dough pieces in the bottom of the prepared bundt pan. Sprinkle with half of the shredded mozzarella and half of the pepperoni slices. Repeat with the remaining dough, then top with the remaining mozzarella and pepperoni. Sprinkle the grated Parmesan over the top layer.
  6. Let the assembled bread rest in the pan for 10 minutes to allow the gluten to relax.
  7. Place the pan on a baking sheet to catch drips. Bake for 25 to 30 minutes, until the top is deep golden brown and the cheese is bubbly. If the top browns too quickly, tent loosely with foil for the last 10 minutes. Internal temperature should reach about 200°F (93°C).
  8. Cool in the pan for exactly 5 minutes. Place a serving plate upside down over the pan, then carefully flip the pan and plate together. Lift the pan off slowly. Sprinkle with fresh parsley if desired.
  9. Serve immediately with warm marinara sauce for dipping.

Notes

For best results, use room temperature dough and low-moisture mozzarella. Let the bread rest for exactly 5 minutes before flipping to prevent sticking. If you don’t have a bundt pan, use a 9-inch round cake pan or cast iron skillet and adjust bake time slightly.
