  • 6 cups cubed fresh seedless watermelon (about 1.5 pounds / 700 grams)
  • 4 to 5 fresh limes for juicing (about Β½ cup or 120 ml fresh lime juice)
  • ΒΌ cup granulated sugar (50 grams), adjust to taste; honey or agave syrup can be used as alternatives
  • 2 cups cold water (480 ml)
  • 4 cups sparkling water or club soda (960 ml)
  • 10 to 15 fresh mint leaves (optional)
  • Ice cubes for serving

Instructions

  1. Cut fresh watermelon into cubes, removing any seeds if necessary. Place about 6 cups (1.5 pounds / 700 grams) of cubed watermelon into a blender and blend on high speed until completely smooth, about 30 to 45 seconds.
  2. Pour the blended watermelon through a fine mesh strainer or cheesecloth into a large bowl or pitcher. Press the pulp gently with a spoon to extract as much juice as possible, yielding about 2 to 2Β½ cups (480-600 ml) of watermelon juice. Discard or save the pulp for other uses.
  3. Using a citrus juicer, squeeze fresh lime juice from 4 to 5 limes to yield about Β½ cup (120 ml). Strain to remove seeds if needed.
  4. In a large punch bowl, combine the watermelon juice, fresh lime juice, granulated sugar (ΒΌ cup / 50 grams), and cold water (2 cups / 480 ml). Stir gently until the sugar dissolves completely, about 2 to 3 minutes.
  5. Tear 10 to 15 fresh mint leaves and stir them into the punch base. Let the punch sit for 10 minutes to infuse the mint flavor.
  6. Add plenty of ice cubes to the punch bowl or chill it in the refrigerator for at least 30 minutes before serving.
  7. Just before serving, pour in 4 cups (960 ml) of chilled sparkling water or club soda. Stir gently with a ladle to combine without losing the fizz.
  8. Ladle the punch into glasses filled with ice. Garnish with extra lime slices or mint sprigs if desired and serve immediately.

Notes

Use ripe, fragrant watermelon for natural sweetness to reduce added sugar. Always use fresh lime juice for best flavor. Strain the watermelon puree to remove pulp for a smooth punch. Add sparkling water just before serving to keep fizz lively. Tear mint leaves to release flavor but avoid over muddling to prevent bitterness. Chill punch bowl beforehand if possible. For less dilution, freeze watermelon juice into ice cubes. The punch base can be prepared up to 2 days ahead and refrigerated; add sparkling water and ice just before serving.
