An easy 10-minute summer salad featuring ripe peaches, creamy burrata, fresh basil, and a drizzle of balsamic glaze. Perfect for impressing guests or enjoying a simple, delicious meal.

Ingredients

Scale
  • 2 large or 3 medium ripe peaches
  • 8 ounces burrata cheese (1 large ball)
  • 810 large fresh basil leaves
  • 23 tablespoons extra virgin olive oil
  • 12 tablespoons balsamic glaze
  • Flaky sea salt to taste
  • Freshly ground black pepper to taste
  • 1 teaspoon honey (optional, for tart peaches)
  • 2 tablespoons toasted pine nuts (optional)

Instructions

  1. Wash and dry the peaches. Cut each in half along the natural seam, twist apart, and remove the pit. Slice each half into 4-5 thick wedges (about 1/2 inch thick). Set aside.
  2. Remove burrata from packaging and drain on a paper towel for 30 seconds. Gently tear the ball into 4-6 pieces using your hands.
  3. Arrange peach wedges in a single layer on a serving platter, slightly overlapping.
  4. Nestle the torn burrata pieces among the peach slices.
  5. Stack basil leaves, roll loosely, and tear into ribbons with your fingers. Scatter over the peaches and cheese.
  6. Drizzle olive oil evenly over the salad in a zigzag pattern, followed by balsamic glaze.
  7. Sprinkle generously with flaky sea salt and a few cracks of black pepper. Add honey or pine nuts if using. Serve immediately.

Notes

Use ripe but firm peaches. Serve immediately; do not make ahead. For best texture, tear burrata by hand instead of slicing. Adjust balsamic glaze to taste.
