  • 8 ounces fresh burrata cheese
  • A handful fresh basil leaves, torn
  • 3 tablespoons extra virgin olive oil
  • 1 garlic clove, halved

  • 1 loaf crusty baguette or rustic Italian bread, sliced 1/2 inch thick and toasted

Instructions

  1. Rinse and gently pat dry the heirloom tomatoes. Dice into roughly 1/2-inch pieces and place in a mixing bowl.
  2. Add 3 tablespoons of extra virgin olive oil, a pinch of sea salt, and freshly ground black pepper to the tomatoes. Gently stir to coat without crushing. Set aside to let flavors meld.
  3. Slice the baguette into 1/2-inch thick pieces. Toast them on a grill pan or in a toaster until golden brown and crisp, about 3–4 minutes per side.
  4. Immediately after toasting, rub the warm bread slices with the cut side of the garlic clove to infuse subtle flavor.
  5. Spread a generous spoonful of creamy burrata over each bread slice. Top with a spoonful of the marinated heirloom tomato mixture. Scatter torn fresh basil leaves on top.
  6. Drizzle a little extra olive oil over the assembled bruschetta and finish with a sprinkle of flaky sea salt. Serve immediately.

Let the tomato mixture sit for 10 minutes before assembling for juicier tomatoes but avoid waiting too long to prevent soggy bread.
