  • 1/4 cup (60 ml) sour cream, full-fat
  • 1 medium fresh cucumber, peeled and finely grated (English cucumber preferred)
  • 2 tbsp fresh dill, finely chopped
  • 1/2 tsp garlic powder
  • 1 tsp freshly squeezed lemon juice
  • 1/2 tsp salt, or to taste
  • 1/4 tsp freshly ground black pepper
  • Everything bagel seasoning (for chips and optional extra sprinkle)
  • 2 plain bagels, sliced thinly for chips

Instructions

  1. Peel and finely grate the cucumber using the small side of a box grater. Place the grated cucumber in a clean kitchen towel or paper towels and squeeze firmly to remove excess moisture. (5 minutes)
  2. Preheat oven to 350Β°F (175Β°C). Slice bagels into thin rounds about 1/4 inch (6 mm) thick. Arrange in a single layer on a parchment-lined baking sheet. Lightly brush with olive oil and sprinkle generously with everything bagel seasoning. Bake for 12–15 minutes, flipping halfway through, until golden and crispy. Watch closely near the end to avoid burning. (15 minutes)
  3. In a mixing bowl, combine softened cream cheese and sour cream. Blend until smooth and creamy using a spatula or hand mixer on low speed. (2 minutes)
  4. Stir in grated cucumber, chopped fresh dill, garlic powder, lemon juice, salt, and black pepper. Fold gently but thoroughly until evenly combined. (3 minutes)
  5. Taste and adjust seasoning with more salt, pepper, or lemon juice if needed. (1 minute)
  6. Cover the dip and refrigerate for at least 30 minutes to let flavors meld. Serve chilled with the homemade everything bagel chips. (30 minutes chilling)

Notes

Squeeze excess water from grated cucumber to avoid watery dip. Use room temperature cream cheese for smoother texture. Flip bagel chips halfway through baking for even crispiness. Substitute sour cream with Greek yogurt for a tangier dip or vegan cream cheese and coconut yogurt for dairy-free. Fresh dill is preferred over dried to avoid bitterness.
