Ingredients

Scale
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) black-eyed peas, rinsed and drained
  • 1 cup frozen corn, thawed
  • 1 large red bell pepper, diced small
  • 1 large green bell pepper, diced small
  • 1/2 cup red onion, finely diced
  • 1 jalapeño, seeded and minced
  • 1 cup cherry tomatoes, quartered
  • 1/2 cup fresh cilantro, chopped
  • 1 avocado, diced
  • 1/4 cup olive oil
  • 3 tablespoons fresh lime juice
  • 2 tablespoons honey
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Prep the vegetables: Dice the bell peppers, onion, and jalapeño into small, uniform pieces. Quarter the cherry tomatoes. Chop the cilantro.
  2. Rinse and drain the beans: Open both cans of beans, pour them into a colander, and rinse thoroughly with cold water. Let them drain for a minute or two.
  3. Thaw the corn: If using frozen corn, place it in a small bowl and cover with warm water for 2 minutes. Drain well.
  4. Make the dressing: In a small bowl or jar, combine the olive oil, fresh lime juice, honey, cumin, salt, pepper, and garlic powder. Whisk vigorously until the honey dissolves and the dressing looks emulsified.
  5. Combine everything: In a large mixing bowl, add the black beans, black-eyed peas, corn, bell peppers, red onion, jalapeño, cherry tomatoes, and cilantro. Pour the dressing over the top. Stir gently but thoroughly.
  6. Let it rest: Let the dip sit at room temperature for 15-20 minutes before serving.
  7. Add the avocado: Dice the avocado just before serving and fold it in gently.

Notes

Drain beans well to avoid watery dressing. Let dip rest for 20 minutes for best flavor. Add avocado just before serving to prevent browning. Use fresh lime juice for best taste. Toast cumin in a dry pan for 30 seconds for extra warmth.
