Fresh 3-Ingredient Watermelon Mint Sorbet

A quick and easy refreshing summer treat made with just watermelon, fresh mint, and lime juice. Perfectly smooth texture with a fresh minty pop and tangy lime brightness.

  • 4 cups (600g) seedless watermelon, diced and chilled
  • 1/4 cup fresh mint leaves, loosely packed, washed and roughly chopped
  • 2 tablespoons (30ml) freshly squeezed lime juice
  • Optional: 1 teaspoon honey or agave syrup (if watermelon is not sweet enough)
  • Optional: pinch of sea salt

Instructions

  1. Cut about 4 cups (600g) of seedless watermelon into chunks, removing any seeds if needed. Chill the pieces in the fridge.
  2. In a blender or food processor, combine the chilled watermelon chunks, fresh mint leaves, and lime juice. Blend on high until smooth.
  3. Optional: Pour the blended mixture through a fine mesh sieve for an ultra-smooth texture.
  4. Taste the sorbet base and stir in honey or agave syrup if needed. Add a pinch of sea salt to balance flavors if desired.
  5. Pour the mixture into a shallow freezer-safe container, cover tightly, and freeze for at least 3 hours, stirring every 45 minutes to break up ice crystals.
  6. Once firm, scoop the sorbet into bowls or cones and garnish with a fresh mint leaf or lime wedge.

Notes

Stir the sorbet every 45 minutes during freezing to prevent icy texture and maintain creaminess. Use ripe watermelon for best sweetness. Fresh lime juice is preferred over bottled for better flavor. Optional sweetener and sea salt can be added to adjust taste.
