Ingredients

Scale
  • 2 cups (240g) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup (115g) unsalted butter, melted and cooled
  • ¾ cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup (120g) plain Greek yogurt (can swap for dairy-free yogurt)
  • 1 ½ cups (about 2 medium) fresh peaches, peeled and diced
  • ½ cup (60g) all-purpose flour (for streusel)
  • ⅓ cup (70g) brown sugar, packed (for streusel)
  • 1 teaspoon ground cinnamon (for streusel)
  • ¼ cup (57g) unsalted butter, cold and cubed (for streusel)
  • Optional: pinch of nutmeg (for streusel)

Instructions

  1. Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with liners.
  2. Prepare the streusel topping: In a small bowl, combine ½ cup flour, ⅓ cup brown sugar, 1 teaspoon cinnamon, and a pinch of nutmeg if using. Add cold cubed butter and mix with fingers or pastry cutter until crumbly. Refrigerate until ready to use.
  3. In a large bowl, whisk together 2 cups flour, baking powder, baking soda, salt, and 1 teaspoon cinnamon.
  4. In another bowl, whisk melted butter, granulated sugar, eggs, vanilla extract, and Greek yogurt until smooth.
  5. Pour wet ingredients into dry ingredients and stir gently until just combined; lumps are okay.
  6. Fold in diced peaches gently.
  7. Spoon batter evenly into muffin cups, filling about ¾ full.
  8. Sprinkle streusel topping generously over each muffin.
  9. Bake for 20–25 minutes until a toothpick inserted comes out clean or with a few moist crumbs.
  10. Cool muffins in the tin for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

Do not overmix the batter to keep muffins tender. Use room temperature eggs for better texture. Keep butter cold for streusel to achieve crumbly topping. Peel peaches to avoid chewy skin bits. Tent muffins with foil if streusel browns too quickly. Muffins taste better after sitting overnight. Store in airtight container to maintain moisture.
