  • 8 medium chicken drumsticks (3 to 3.5 pounds / 1.4 to 1.6 kg), skin-on

  • 3 tablespoons Sriracha sauce (adjust to heat preference)
  • 2 tablespoons soy sauce (low sodium recommended)
  • 1 tablespoon apple cider vinegar
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika (optional)
  • Β½ teaspoon ground black pepper, freshly cracked if possible
  • 1 teaspoon salt
  • 2 tablespoons olive oil

Instructions

  1. Pat the chicken drumsticks dry with paper towels. Season evenly with salt and black pepper. Let rest at room temperature for about 15 minutes.
  2. In a medium bowl, whisk together honey, Sriracha, soy sauce, apple cider vinegar, minced garlic, smoked paprika, and olive oil until smooth and well combined. Set aside.
  3. Preheat grill to medium-high heat (375Β°F to 400Β°F) or warm grill pan over medium-high heat for about 5 minutes. Oil the grill grates lightly to prevent sticking.
  4. Place drumsticks skin side down on the grill or pan. Cook for 6-8 minutes without moving to get golden grill marks and crispy skin. Flip and cook the other side for another 6-8 minutes.
  5. Brush drumsticks generously with the honey sriracha glaze on all sides. Continue cooking, turning every 3-4 minutes and brushing more glaze each time, for another 10-12 minutes. Use an instant-read thermometer to check for doneness (165Β°F internal temperature).
  6. Remove drumsticks from heat and tent loosely with aluminum foil. Let rest for 5 minutes to redistribute juices and let the glaze set.
  7. Serve warm, optionally drizzling with leftover glaze or sprinkling fresh chopped cilantro.

Notes

If glaze starts to burn, move drumsticks to indirect heat and lower temperature. Pat chicken dry before seasoning for crispier skin. Brush glaze multiple times during cooking for layered flavor. Rest chicken after cooking for juiciness. Oven baking at 400Β°F for 35-40 minutes is a good alternative if no grill is available.
