Easy Wholesome Garlic Parmesan Green Bean Casserole (No Canned Soup)

A fresh, from-scratch green bean casserole with a creamy garlic parmesan sauce and a crunchy panko topping. Made without canned soup, this dish is perfect for holidays or weeknight dinners.

  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 1 ½ cups whole milk
  • ½ cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • ½ teaspoon onion powder
  • ¼ teaspoon dried thyme (optional)
  • Salt and black pepper, to taste
  • ½ cup panko breadcrumbs
  • 2 tablespoons unsalted butter, melted
  • ¼ cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C). Wash and trim green beans, cut in half crosswise, and pat dry.
  2. On a large baking sheet, toss green beans with olive oil, salt, and pepper. Spread in a single layer. Roast for 12-15 minutes until bright green and tender-crisp. Set aside.
  3. In a medium saucepan over medium heat, melt 3 tablespoons butter. Add minced garlic and sauté for 1 minute until fragrant.
  4. Whisk in flour and cook for 1-2 minutes, stirring constantly, until golden and bubbly.
  5. Slowly pour in milk and heavy cream while whisking continuously. Cook until sauce thickens, about 3-4 minutes.
  6. Reduce heat to low. Stir in 1 cup Parmesan, onion powder, and dried thyme (if using). Whisk until cheese is melted and sauce is smooth. Season with salt and pepper to taste. Turn off heat.
  7. Reduce oven temperature to 375°F (190°C). Place roasted green beans in a 2-quart baking dish. Pour sauce over and stir to coat.
  8. In a small bowl, combine panko, 2 tablespoons melted butter, ¼ cup Parmesan, and parsley. Mix until crumbs are moistened.
  9. Sprinkle topping evenly over casserole. Bake for 15-18 minutes until bubbly and golden. For extra crunch, broil for 1-2 minutes.
  10. Let casserole rest for 5 minutes before serving.

Notes

For gluten-free, use gluten-free flour and panko. For a lighter sauce, replace heavy cream with extra milk. To make ahead, assemble without topping, refrigerate up to 24 hours, then add topping and bake, adding 5-10 minutes.
