  • 1 lb ground beef (80/20 works best)
  • 1 tbsp olive oil
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • Salt and black pepper, to taste
  • 1/4 cup beef broth
  • 1 large bag (1316 oz) tortilla chips (restaurant-style)
  • 2 cups shredded Mexican blend cheese (or cheddar and Monterey Jack)
  • 1 cup refried beans (warmed)
  • 1/2 cup pickled jalapeños (drained)
  • 1 cup black beans (drained and rinsed)
  • 1 cup corn kernels (frozen and thawed, or canned and drained)
  • 1 cup sour cream
  • 1 cup fresh pico de gallo or salsa
  • 1 avocado (diced)
  • 1/2 cup fresh cilantro (chopped)
  • 1 lime (cut into wedges)
  • 1/2 cup sliced black olives (optional)
  • Green onions (sliced, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with aluminum foil, letting the edges hang over slightly.
  2. Cook the seasoned beef: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 2-3 minutes until softened. Add the ground beef and break it apart with a wooden spoon. Cook for 5-6 minutes until browned. Drain excess fat if needed. Add the minced garlic, chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Stir for 1 minute until fragrant. Pour in the beef broth and let it simmer for 2 minutes until slightly thickened. Remove from heat.
  3. Warm the refried beans: In a small saucepan over low heat, warm the refried beans with a splash of water or broth to loosen them. Stir occasionally until spreadable.
  4. Layer the chips: Spread half the tortilla chips evenly over the prepared baking sheet. Drizzle or dollop half the warm refried beans in small spoonfuls over the chips. Sprinkle half the shredded cheese evenly on top. Add half the black beans, corn, and pickled jalapeños.
  5. Add the second layer: Repeat with the remaining chips, refried beans, cheese, black beans, corn, and jalapeños. Make sure the chips on top are nestled into the cheese below.
  6. Bake: Place the baking sheet in the preheated oven and bake for 8-10 minutes, until the cheese is fully melted and bubbly. Watch closely after 8 minutes.
  7. Add the beef: Remove the sheet from the oven. Spoon the seasoned ground beef evenly over the melted cheese layer.
  8. Top and serve: Dollop the sour cream in small spoonfuls across the board. Add the pico de gallo, diced avocado, sliced black olives, and fresh cilantro. Squeeze a lime wedge or two over the top. Sprinkle sliced green onions for color. Serve immediately.

Notes

Layer strategically to avoid soggy chips. Bake chips and cheese first, then add beef after to keep it juicy. Use thick, restaurant-style chips for best results. Drain canned ingredients well to prevent sogginess.
