Easy Tender Crockpot Beef and Broccoli Recipe for Perfect Dinner

A simple, fuss-free slow cooker recipe delivering tender beef and crisp-tender broccoli in a savory-sweet sauce, perfect for busy weeknights or potlucks.

  • 1.5 pounds beef chuck or flank steak, thinly sliced
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup oyster sauce (optional)
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 tbsp sesame oil
  • 1 tsp grated fresh ginger (optional)
  • 1/4 tsp black pepper
  • 1 tbsp cornstarch
  • 1/4 cup water
  • 4 cups fresh broccoli florets

Instructions

  1. Slice the beef into thin, even strips about 1/4 inch thick.
  2. In a medium bowl, whisk together soy sauce, oyster sauce, brown sugar, minced garlic, sesame oil, grated ginger, and black pepper.
  3. Place the sliced beef into the crockpot and pour the sauce over it. Stir gently to coat all the meat. Cover and cook on low for 4-5 hours or on high for 2-3 hours.
  4. About 30 minutes before the beef is done, mix cornstarch with cold water until smooth to make a slurry.
  5. Add broccoli florets to the crockpot, then slowly pour in the cornstarch slurry while stirring gently. Cover and cook on high for 20-30 minutes until broccoli is tender but still bright green and sauce thickens.
  6. Stir gently, taste the sauce and adjust salt or soy sauce if needed. Serve hot over steamed rice or noodles.

Notes

Add broccoli near the end of cooking to keep it crisp-tender and bright green. Use tamari instead of soy sauce for gluten-free. Adjust sweetness and salt to taste. If crockpot runs hot, check beef after 3 hours to avoid overcooking. Cornstarch slurry is essential for thickening the sauce.
