  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 400Β°F (200Β°C). Line a large baking sheet with parchment paper or foil.
  2. Roast the sweet potatoes: Place the peeled and chopped sweet potatoes on the baking sheet. Drizzle with a tablespoon of olive oil and toss to coat. Spread in a single layer. Roast for 25-30 minutes, until fork-tender and edges are caramelized. Let cool for 5 minutes.
  3. Make the filling: Transfer roasted sweet potatoes to a large mixing bowl. Add melted butter, brown sugar, beaten eggs, vanilla, salt, and cinnamon. Mash with a potato masher until mostly smooth, then use a hand mixer on low speed for about 30 seconds until creamy. Stir in the milk.
  4. Prepare the streusel: In a medium bowl, combine chopped pecans, flour, brown sugar, cinnamon, and salt. Add cold butter cubes. Use a fork or pastry cutter to cut the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces.
  5. Assemble the casserole: Spread the sweet potato mixture evenly into a greased 9×13-inch baking dish. Sprinkle the pecan streusel evenly over the top.
  6. Bake: Place the dish in the oven and bake at 350Β°F (175Β°C) for 25-30 minutes, until the streusel is golden brown and the filling is bubbly around the edges. If browning too fast, tent with foil for the last 10 minutes.
  7. Rest and serve: Let the casserole sit for 5-10 minutes before serving. Serve warm.

Notes

For best flavor, roast the sweet potatoes instead of boiling. The streusel should have visible butter pieces for a crunchy texture. You can assemble the casserole up to 24 hours in advance and refrigerate. For freezing, assemble unbaked and freeze for up to 3 months.
