  • 2 medium bell peppers, chopped (any color)
  • 1 medium onion, chopped (yellow or white)
  • 1 medium zucchini, chopped
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 810 small corn or flour tortillas
  • Toppings: shredded lettuce, diced tomatoes, sour cream or Greek yogurt, shredded cheese, fresh cilantro, lime wedges

Instructions

  1. Preheat your oven to 400Β°F (200Β°C).
  2. Chop the bell peppers, onion, and zucchini into roughly 1/2-inch pieces.
  3. On a sheet pan, combine the ground beef, chopped veggies, olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Use your hands to toss and mix until everything is evenly coated.
  4. Spread the mixture into an even layer on the pan, ensuring it’s not overcrowded.
  5. Roast for 20-25 minutes, stirring halfway through (at the 10-minute mark) and breaking up any large clumps of beef.
  6. Check for doneness: beef should be browned and cooked through, veggies tender and starting to char. For extra char, broil for 1-2 minutes.
  7. Let the filling rest on the pan for 2 minutes before serving.
  8. Warm tortillas in the oven (wrapped in foil for 3-4 minutes) or in a dry skillet over medium-high heat for 30 seconds per side.
  9. Assemble tacos by spooning filling into warm tortillas and adding desired toppings. Serve immediately.

Notes

Don’t overcrowd the pan to ensure proper roasting and crispy edges. Break up beef halfway through for even browning. Smoked paprika adds depth of flavor. Let filling rest for 2 minutes before serving to allow juices to redistribute. For extra char, broil for 1-2 minutes at the end.
