A quick and easy sheet pan chicken fajitas recipe using just five ingredients, perfect for busy weeknights. Roasted chicken and bell peppers deliver juicy, flavorful fajitas with minimal effort and cleanup.

  • 1.5 pounds boneless, skinless chicken breasts, sliced into strips
  • 3 medium bell peppers (red, yellow, and green), sliced
  • 3 tablespoons olive oil
  • 2 tablespoons fajita seasoning (chili powder, smoked paprika, cumin, garlic powder, salt, black pepper)
  • Juice of 1 lime

Instructions

  1. Preheat your oven to 425Β°F (220Β°C).
  2. Slice the chicken breasts into 1/2-inch thick strips.
  3. Wash and slice the bell peppers into strips similar in size to the chicken.
  4. In a large mixing bowl, combine the sliced chicken and peppers. Drizzle with olive oil and sprinkle with fajita seasoning. Toss until evenly coated.
  5. Spread the mixture evenly on a baking sheet in a single layer.
  6. Roast in the oven for 20-25 minutes, tossing halfway through (around 12 minutes), until chicken is cooked through (165Β°F internal temperature) and peppers are tender with some caramelized edges.
  7. Optional: Broil for 1-2 minutes for a smoky char, watching carefully to avoid burning.
  8. Remove from oven and squeeze fresh lime juice over the top.
  9. Serve immediately with warm tortillas and your favorite toppings or over a salad.

Do not overcrowd the pan to avoid steaming. Use a meat thermometer to ensure chicken reaches 165Β°F. Let chicken rest a few minutes after roasting for juiciness. Optional broil step adds smoky char.
