  • 1 cup broccoli florets, cut into bite-sized pieces
  • 1 cup cauliflower florets, cut into bite-sized pieces (optional)
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 2 tablespoons buttermilk powder
  • 1 tablespoon fresh dill, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon salt, or to taste
  • 1 tablespoon pickle juice
  • 2 tablespoons milk, to thin the dip

Make the Ranch Dip: In a small mixing bowl, combine 1 cup sour cream, 1/2 cup mayonnaise, 2 tablespoons buttermilk powder, 1 tablespoon fresh dill, 1 tablespoon fresh parsley, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon black pepper, 1/2 teaspoon salt, and 1 tablespoon pickle juice. Slice cucumber into half-moons. Thinly shred purple cabbage. Halve cherry tomatoes. Trim snow peas or snap peas. Cut broccoli and cauliflower into bite-sized florets.

Arrange the Bento Box: Take your bento box or container and arrange the veggies by color in rainbow order: red bell pepper, orange bell pepper, yellow bell pepper, green bell pepper, purple cabbage, carrots, cucumber, cherry tomatoes, snow peas, broccoli, and cauliflower. Place the ranch dip in a small container with a tight-fitting lid.
  4. Store or Serve Immediately: If eating right away, serve immediately. If meal prepping, cover the bento box and refrigerate for up to 4 days. Keep the dip separate until ready to eat to maintain crunchiness.
