  • 1 cup purple grapes or blackberries
  • Wooden or metal skewers (if using wooden, soak in water for 10 minutes to prevent burning if grilling)
  • 1 cup plain Greek yogurt (full-fat or 2%)
  • 2 tablespoons honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon (optional)

Instructions

  1. Prep the fruit (5 minutes): Wash all fruit thoroughly. Hull strawberries and cut in half (or quarters if large). Cut cantaloupe or mango into 1-inch cubes. Cut pineapple into similar-sized chunks. Leave grapes and blueberries whole. Pat everything dry with a clean kitchen towel.
  2. Make the yogurt dip (2 minutes): In a small bowl, combine plain Greek yogurt, honey (or maple syrup), vanilla extract, and cinnamon. Whisk until smooth and creamy. Taste and adjust sweetness if desired. Cover and refrigerate until ready to serve.
  3. Assemble the rainbow kabobs (5 minutes): Grab skewers. Thread fruit in rainbow order: red (strawberries), orange (cantaloupe or mango), yellow (pineapple), green (green grapes), blue (blueberries), purple (purple grapes). Leave a little space at the bottom for a handle. Thread 5-6 pieces per skewer, not too tightly.
  4. Arrange and serve (2 minutes): Place finished kabobs on a large platter in a fan pattern or neat row. Put the bowl of yogurt dip in the center or on the side. Serve immediately, or refrigerate for up to 2 hours before serving. The dip can be made a day ahead.
