This easy pumpkin dump cake with cake mix topping is a simple, 4-ingredient fall dessert that comes together in minutes. Creamy spiced pumpkin layer topped with a buttery, crumbly cake mix topping—perfect for Thanksgiving, potlucks, or cozy nights in.

Ingredients

Scale
  • 1 can (15 oz) pumpkin puree
  • 1 can (12 oz) evaporated milk
  • 3 large eggs, room temperature
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 box (15.25 oz) yellow cake mix
  • 3/4 cup unsalted butter, melted
  • 1 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Spray a 9×13-inch baking dish generously with non-stick cooking spray.
  2. In a large mixing bowl, combine pumpkin puree, evaporated milk, eggs, sugar, vanilla extract, pumpkin pie spice, and salt. Whisk until smooth and well combined.
  3. Pour the pumpkin mixture into the prepared baking dish and spread evenly with a spatula.
  4. Sprinkle the entire box of dry cake mix evenly over the pumpkin layer. Do not stir.
  5. If using nuts, sprinkle them over the cake mix.
  6. Drizzle the melted butter evenly over the cake mix layer.
  7. Bake for 45-55 minutes, or until the top is golden brown and the edges are bubbly. The center should be set but still slightly jiggly.
  8. Let cool on a wire rack for at least 15-20 minutes before serving. Serve warm or at room temperature.

Notes

Let the dump cake rest for at least 15-20 minutes before serving to allow the pumpkin layer to set. For best results, use 100% pumpkin puree, not pumpkin pie filling. Spice cake mix can be substituted for yellow cake mix for a deeper flavor. The dessert tastes even better the next day.
