  • 1 cup creamy peanut butter
  • 1 Β½ cups rolled oats

  • Β½ cup chocolate chips
  • ΒΌ cup ground flaxseed (optional)
  • Β½ teaspoon vanilla extract
  • Pinch of salt (if peanut butter is unsalted)

Instructions

  1. Mash the bananas in a large mixing bowl until smooth with a few small lumps.
  2. Add peanut butter, honey, and vanilla extract. Stir until well combined and no white streaks remain.
  3. Pour in rolled oats, ground flaxseed (if using), and salt. Stir until evenly distributed. The mixture will look dry and shaggy.
  4. Let the mixture rest for 5 minutes to allow oats to absorb moisture. Stir again; it should hold together when pressed. If too dry, add a teaspoon of honey or splash of milk. If too wet, add another tablespoon of oats.
  5. Gently fold in chocolate chips until evenly distributed, being careful not to overmix.
  6. Using a cookie scoop or tablespoon, portion out the mixture and roll into smooth balls (about 18–20 bites). Lightly wet palms if mixture sticks.
  7. Place bites on a parchment-lined baking sheet. Enjoy immediately or chill for at least 30 minutes to firm up and meld flavors.

Notes

Use ripe bananas with brown spots for best sweetness and binding. Let mixture rest 5 minutes before rolling for perfect texture. Chill at least 30 minutes for firmer bites. Store in refrigerator up to 1 week or freeze up to 3 months. Double batch works well.
