A simple, festive, and quick-to-assemble yogurt parfait featuring creamy Greek yogurt, fresh strawberries and blueberries, and crunchy cinnamon-spiced granola, perfect for summer celebrations.

  • 2 cups Greek yogurt (plain or vanilla)
  • 2 tablespoons honey
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries, washed and patted dry
  • 1 cup granola (cinnamon-spiced preferred)
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. In a mixing bowl, combine 2 cups (480 ml) of Greek yogurt with 2 tablespoons (30 ml) of honey. Stir gently until the honey is fully incorporated and the yogurt is smooth. Adjust sweetness if desired.
  2. Rinse 1 cup (150 g) each of strawberries and blueberries. Hull and slice the strawberries into thin pieces. Pat the blueberries dry with a paper towel.
  3. Layer the parfaits in clear cups starting with about 2 tablespoons (30 g) of the honey-yogurt at the bottom, followed by a layer of sliced strawberries (2-3 pieces), a tablespoon (15 g) of granola, then a layer of blueberries (about 10 berries). Repeat layering once more or until cups are full, ending with granola on top.
  4. Add a small fresh mint leaf on top for garnish. Chill the parfait cups in the fridge for 10–20 minutes before serving.
  5. Serve chilled. If preparing ahead, keep granola separate and sprinkle on just before serving to maintain crunch.

Use full-fat Greek yogurt for creaminess and to avoid watery parfaits. Pat berries dry to prevent soggy layers. Keep granola separate until just before serving to maintain crunch. You can swap honey with maple syrup and use dairy-free yogurt for a vegan version.
