  • 1 teaspoon chia seeds (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • For the topping (optional): 1-2 tablespoons extra peanut butter, 1 banana sliced, 1 tablespoon chocolate chips or cacao nibs, a drizzle of honey or maple syrup, chopped peanuts or crushed almonds

Instructions

  1. Combine the wet ingredients first. In your mason jar or container, add the milk, Greek yogurt, peanut butter, maple syrup (or honey), and vanilla extract. Whisk or stir these together until the peanut butter is fully incorporated and the mixture is smooth.
  2. Add the dry ingredients. Pour in the rolled oats, chia seeds (if using), and a pinch of salt. Stir everything together until all the oats are fully coated in the liquid mixture. Make sure there are no dry oats floating on top.
  3. Seal and shake. Put the lid on your jar tightly and give it a good shake for about 10-15 seconds. This ensures everything is evenly distributed. If you are using a bowl, just stir vigorously.
  4. Refrigerate overnight. Place the jar in the refrigerator for at least 6 hours, but preferably 8-12 hours. The oats need this time to absorb the liquid and soften.
  5. Check the consistency in the morning. When you take it out, the oats should be thick and creamy. If it looks too thick for your liking, stir in a splash of milk (about 1-2 tablespoons) to loosen it up. If it is too runny, it likely needed more chia seeds or a longer soak time. Add a few extra chia seeds and let it sit for another 30 minutes.
  6. Top and serve. Give the oats a good stir. Transfer to a bowl if you prefer, or eat straight from the jar. Add your toppingsβ€”a drizzle of extra peanut butter, sliced banana, a sprinkle of chocolate chips, or whatever you have on hand. Serve cold, or microwave for 30-45 seconds if you prefer warm oats.

Use rolled oats (old-fashioned) for best texture; avoid instant or steel-cut oats. For a vegan version, use plant-based milk and yogurt, and maple syrup instead of honey. For gluten-free, use certified gluten-free oats. The peanut butter flavor becomes more pronounced after 24 hours. Store in the refrigerator for up to 5 days. Do not freeze.
